Ingredients:

  • 1 store bought or pre-made round Pie Crust (see original recipe for instructions on how to prepare Galette Dough)
  • 4-5 Heirloom Tomatoes
  • 6oz Herbed Goat Cheese (original recipe called for Herbed Cream Cheese, but we love using Coppertail Farm’s Goat Cheese!)
  • 1 Egg Yolk
  • 1-2 TBSP Za’atar Spice
  • 4-5 Thyme Sprigs
  • Salt & Pepper
  • Basil leaves
  • Extra Virgin Olive Oil

Directions:

  1. Cut tomatoes into ¼” slices. Place sliced tomatoes on paper towel to absorb excess liquid. This will help make sure we don’t end up with a soggy galette. Allow your tomatoes to drain on the paper towel for at least 20 minutes.
  2. Take your herbed goat cheese out of the fridge and allow it to come to room temperature.
  3. Preheat your oven to 400F.
  4. Unroll pie crust onto parchment paper lined baking sheet. Spread goat cheese evenly, leaving about 1″ around the pie crust border uncovered.
  5. Arrange tomato slices & season with salt & pepper. Add thyme sprigs on top.
  6. Carefully fold the edge of the crust over itself to create a nice border that will hold in the ingredients as they bake.
  7. Brush the crust with egg yolk & sprinkle with za’atar spice.
  8. Bake for 25-30 minutes. Remove from oven & allow to cool for 15 minutes. Garnish with fresh basil leaves & olive oil.
